The Bikini Cocktail

Serves 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put the listed components into a pot, bring to a gentle boil, stirring so the sugar melts. Next, take off the stove and leave to cool fully. Decant into a sterilised bottle, cap it keeping it in the refrigerator, where it will keep for around one month.

For the Premix: Combine all the liquid ingredients into a sizeable container, leave to sit for 60 minutes, then filter it best through cheesecloth, so it's perfectly clear.

For serving: Add 85ml of the premix into a stirring glass packed with ice, gently stirring lightly for one minute to chill. Filter into a chilled martini glass or a similar vessel, garnish with some cranberries and finish using a brief mist with the mandarin essence above the glass.
